Blue Mould

I am in Garden Bay, BC, Canada, and I opened a pack of 'mature' today and found that a corner had gone mouldy (blue/grey) which I cut away. Very disappointing and very surprising as, up until now, I have been regularly buying their cheese and going for the 'extra mature' which is very good. This time I had to get the so-called mature pack. Don't get me wrong, I love several varieties of blue cheese; I just don't expect cheddar to be turning blue.

Has Changed From Good Cheese To A Block Of Wax

I have been buying Cathedral City for years, Mature, Extra Mature and Vintage Cheddar. The last couple of packs of Mature have been foul, like blocks of wax, one was thrown away, a new one opened and has been left uneaten in the fridge as no-one wants it, it really is revolting now. No crumble to it, it is like rubbery wax and tastes odd, doesn't melt properly either. Unfortunately I have another 3 packs of it but I don't think there is any point opening them and won't be buying any more. It is disgusting.

Tasty Cheese

This cheeses has a nice taste, even mellow flavor that I ate with sandwiches, cooking and having a quick wedge of cheese. It is best for lunch box too.

Tasteless Spongy Fatty

Have bought this brand before and it's been ok. Saw this cheese today at half price, £2.50 instead of £5.

Still 550 g of it to eat in the big pack!

But a local cheese instead from a small producer.

Perfect Cheese

I've been driven into alot of cheese's throughout the year's for it's texture, scent and price, but nothing compared to Cathedral City Cheese. This cheese has to be one of the best so far as of this date.

Texture: Now the Texture of the cheese is near or on the point perfect. Not over done, not under either. They take their time to sooth the flavour, scent and the texture of the cheese itself

Taste: When I first came across this cheese, I had no guess of what the taste would be like. Once I bought it, I was driven into having more. The taste is purely excellent on it's own or topped with something else. There are different kinds of cheese avaliable aswell (mature, mild and light), but it depends on what you get for it's taste.

Price: Now the price I saw for it's cheese range can get a bit pricey depending on the ammount you buy. for just a small block, it would roughly cost you around £1.50 - £2.50, but it depends on what other stores do for it aswell. You can find good deals if you look around some stores/supermarkets that have it.

Q&A

The Mature Cathedral City cheese we buy from our local Tesco seems to have been made in 2011 with a use-by date of 2015. It is impossible to use a cheese slice on this cheese because it just crumbles into hard lumps and falls apart.

Has it been frozen for too long? I don't recall this cheese being so bad in earlier years - I could always use a cheese slice. It seems to be only in the last year or so that this phenomenon has become the norm - that is, almost every pack, particularly the thicker ones, displays this effect, rendering it useless for sandwiches.

Is Tesco hoarding this cheese frozen for years or is Cathedral?
